Summer is officially here as of a few days ago… but that doesn’t mean a whole lot because I’ve been melting away for a couple months now. Well, I’ve got a fab kit for you just in time for summer! Recipe share: Chicken Caesar Pitas

Occasionally I like to share recipes on my scrap blog…. ;) I figure most of us like food, right? hehe

Today I made some Chicken Caesar Pitas for lunch. They were mighty tasty!! Simple too… which I believe all lunch recipes should be.

Chicken Caesar Pitas

2 pitas or 4 pita halves
2 cups chopped romaine lettuce
1 cup diced cooked chicken
4 slices cooked bacon, cut into pieces
Handful of Caeasar croutons
1 lemon wedge
Caesar dressing (to taste… matter of preference)
Parmesan cheese… as much as you like (I prefer the grated cheese over the powdered stuff)

Mix together the lettuce, chicken, bacon, croutons, and parmesan cheese in a small mixing bowl. Toss the mixture with the dressing. The amount of dressing is a matter of preference, but note that pita bread is kinda dry. Squeeze the juice from the lemon wedge into the mixture. Fill the pitas with the mixture. That’s it! Yummy!!!

These would be good with Ranch dressing and Colby Jack cheese in place of the Caesar dressing and parmesan. You don’t have to do the croutons, but I like the crunch it adds!

Well, I was hoping to have some new goodies for you today! Unfortunately my little angel was sick this week. She’s had a fever the past 4 days and all she does all day is lay next to me or on my lap. It’s quite pathetic. I’ve been letting her sleep in our bed at night and she flails all over the place! Needless to say, I’m tired! Next Friday there will be some FAB STUFF! :)

Good Day Sunshine Freebie!
